This creamy Coffee Smoothie tastes like a fancy coffee shop drink, without the refined sugar or dairy. It’s paleo and vegan friendly, and can be made with or without the caffeine– either way, it’s ridiculouslydelicious.
I don’t know about you, but we always have leftover coffee in our house. Now, you can put that cold, leftover coffee to good use! Alternatively, you could use cold brewed coffee, or brew some extra coffee the night before so it can chill in the fridge while you sleep.
How to Make a Coffee Smoothie
Once you have some cold brewed coffee on hand, you’ll need the following to make a healthy smoothie with it:
- Dates. Dates are my favorite natural sweetener, with an almost caramel-like flavor. You only need 4 of them to make this drink taste better than a Frappuccino, and you’ll get a healthy does of fiber and iron with each sip!
- Hemp Hearts. Hemp hearts are a complete source of plant-based protein, containing all the essential amino acids the body needs. You can’t taste them, but they add a nice creaminess to the overall smoothie.
- Cashew Butter. Instead of using almond milk, or another dairy-free milk, I prefer to add a spoonful of nut butter to my smoothies with water for a similar effect. In this case, cashew butter makes this shake unbelievably creamy, with a very mild nutty flavor. (Almond butter could be used with similar effect.)
- Spinach. I love adding spinach to my smoothies, for a boost of extra vitamins and minerals. You can’t taste it AT ALL, but this addition does turn the drink green. I don’t mind the green hue, because the flavor is ridiculous, but it’s something to keep in mind if serving picky eaters.
A Coffee Smoothie without Banana
Call me crazy, but I don’t think bananas and coffee are a good flavor combination. Bananas usually work well for creating creamy, thick smoothies, but I prefer to use them in my Chocolate Peanut Butter Banana Smoothie, instead. The dates are WAY better in this recipe!
Coffee Ice Cubes
You can boost the coffee flavor of this smoothie by using coffee ice cubes instead of regular ice. To make them, just pour leftover brewed coffee into an ice cube tray and freeze it overnight! (I like to add the coffee ice cubes to my Frosty Chocolate Shake recipe in No Excuses Detox for a mocha-flavored smoothie, too.)
Coffee Smoothie for Weight Loss
What I love about this smoothie, is that it’s a lower-calorie, higher protein alternative to Starbucks, or other coffee house blended drinks. This smoothie packs 10 grams of plant-based protein per serving, plus 6 grams of fiber, to help keep you satisfied for hours.
I usually drink it as a breakfast replacement, with maybe a handful of nuts or a piece of fruit later as a mid-morning snack. Whenever you try it, I hope you’ll love it as much as I do!
- 1 cup brewed coffee (chilled)
- 6 to 8 Medjool dates , pitted (soak in hot water for 15 minutes if they are not soft)
- 2 tablespoons hemp hearts
- 2 tablespoons cashew butter
- 2 cups baby spinach (optional)
- 3 cups ice cubes (see Note)
In a high-speed blender, combine the cold coffee, 6 of the pitted dates, hemp hearts, cashew butter, and spinach, if using. Blend until the dates have broken down and the mixture is very smooth. Taste the mixture and add more dates if you’d like it a little sweeter. (I prefer using 4 dates per serving, but it is sweet!)
Add the ice cubes (I usually use a pint glass of ice cubes per serving, for easy measuring) and blend again, until a thick, frosty-like texture is achieved. It should have the texture of a milkshake. Serve right away.
Note: This smoothie has a delicious coffee flavor when you use regular ice cubes, but for an extra-potent coffee flavor, try using coffee ice cubes instead! To make them, simply pour leftover coffee into an ice cube tray and store it in the freezer overnight.
